Chenin blanc (Pineau Blanc) is used exclusively for both still and sparkling Vouvray wines, as well as the white Touraine Amboise. Precious little is known about the origins of this grape, but it has become so well acclimatised to the Loire Valley over such a long time that it can be considered as a native variety.
Sauvignon is used to produce elegant and fruity Touraine white wines.
Gamay, Côt and Cabernet Franc must be blended to produce the red and rosé wines of the Touraine Amboise communal A.O.C. However, the proportions may vary from one producer to the next.
It is not compulsory to use a blend of three grape varieties for the Touraine regional A.O.C. wines, and one single variety may be chosen for the qualities of its unique flavours.
Pinot d’Aunis, Pinot Noir and Grolleau are other grape varieties which may be blended or used as single varieties in Touraine wines.
